Aramark: Bringing CO₂ Transparency to the Table
Aramark, Germany's second-largest catering company, has partnered with Eaternity to integrate climate transparency into its daily operations. With Eaternity now active in a large number of restaurants nationwide, Aramark is making the CO₂ footprint of every dish visible to guests to advance its global sustainability strategy.
As part of our global sustainability strategy, we want to shape a positive future—for everyone we reach. In addition to responsible food purchasing, efficient food production, reducing packaging waste, and minimizing food waste, this naturally also includes transparent presentation of the carbon footprint of our dishes.
— Kathrina Diercks, Head of Sustainability, Aramark
Background: Full-Service Catering at Scale
Aramark is a leading full-service caterer in Germany, serving more than 500 clients across workplace dining, healthcare, sports, and events. Its operations span 20 stadiums and arenas, and its refreshment services reach over 6,000 companies at 10,000 locations.
Globally, Aramark's sustainability initiative Be Well. Do Well. sets clear goals:
- Reduce greenhouse gas emissions by 15% by 2025 (compared to 2019)
- Cut food waste by 50% by 2030 (compared to 2015)
Challenge: Transparency and Impact at Scale
Aramark sought to achieve two central goals:
- Deliver transparency — provide guests and clients with reliable, science-based CO₂ data
- Achieve impact — reduce food-related emissions in line with global climate commitments and the Be Well. Do Well. strategy, without compromising taste or guest satisfaction
Solution: Eaternity as Data Partner
Aramark selected Eaternity as its data partner for its robust methodology and seamless integration.
Eaternity provides not only the best technical interface for evaluations but also acts fairly and cooperatively. Gastro does not require any particularly complex training and it could be efficiently integrated into our processes and system environments. The onboarding by founder Manuel Klarmann himself left no questions unanswered.

Learnings and Tips
1. Consistency leads to long-term gains
Reducing meat and consistently offering climate-friendly menus make the biggest difference to CO₂ reduction. Small, sustained changes across many meals add up to significant impact.
2. Pick a collaborative partner
A close working relationship with Eaternity enabled fast onboarding and long-term collaboration. Finding a partner who understands the complexities of large-scale catering operations is essential.
We are in constant communication with Eaternity. This collaborative dialogue helps us to work together as partners on the future of community catering.
